Individual – Baked Banana Oatmeal

Over the years I have gone through spells where I cook the same thing for breakfast for a few months and then switch to something new. Through most of college, I fixes homemade instant oatmeal (recipe coming soon), but in the time since school I have stayed away from oatmeal most of the time. Baked oatmeal is a different story. There is something about the firm but not crisp top and the creamy interior that gets me every time. So I am passing along my number one go to on mornings when I want baked oatmeal.

Single Serving - Baked Banana Oatmeal

Individual – Baked Banana Oatmeal


1 Banana (mashed)

1/2 c  Old Fashioned Oats

1 1/2 tbsp  Flax Seed Meal

1/4 tsp  Sea Salt

1/4 tsp Baking Soda

1/2 c  Milk of Choice

1/4 tsp  Vanilla Extract

1/2 tsp  Cinnamon

1/8 tsp  Nutmeg

Suggested Toppings:

1 tbsp Walnuts

1 tbsp  Maple Syrup

2 tbsp Granola


  1. Preheat oven to 350*F.
  2. Combine all of the ingredients and mix well.
  3. Pour into greased bowl or baking dish.
  4. Bake for 20 minutes.
  5. Allow to cool for 5 minutes before topping if desired.
