Whole Grain Sweet Potato Pancakes

Below I will include both the instructions for whole grain sweet potato pancakes using my pancake mix and mixing up the dry ingredients for a one time preparation of pancakes. This recipe yields servings in increments of:

4 – 4″ pancakes using a 1/4 cup measuring cup to pour heaping scoops of batter

2 – 6″ pancakes using a 1/2 cup measuring cup to pour heaping scoops of batter

1 – 8″ pancake using a cup measuring cup to pour a heaping scoops of batter

Plus any fresh fruit, nuts, dried fruit, chocolate chips, or anything else you desire to add into the pancakes.

Directions:

  1. Mix and measure dry ingredients in a medium-size bowl.
  2. Add in remaining ingredients and stir well to combine.
  3. Fold in additional add-ins, from nuts to fruit to chocolate chips
  4. Allow the mixture to sit for 5 minutes.
  5. While the mixture thickens slightly, heat a skillet or griddle pan over medium heat.
  6. Lightly grease the pan with a towel and oil of your choice.
  7. Using a 1/4 cup measuring cup, scoop out the batter onto the heated pan and lightly spread the batter.
  8. Allow to cook for about 2 minutes or until the batter starts to bubble and the edge is starting to become mate in appearance; then using a flat spatula, flip the pancakes on at a time.
  9. Allow the pancakes to cook a few minutes before removing to a plate.
